Meet Head Chef Will Fung
José Andrés ThinkFoodGroup is pleased to announce the appointment of Will Fung to head chef at China Chilcano. A seasoned professional in the DC-area culinary scene, Fung brings a new perspective to Andrés’ modern Peruvian restaurant in Penn Quarter.
Lauded since opening in 2015, and awarded a Bib Gourmand in the 2017 – 2021 Michelin Guides to Washington DC, China Chilcano celebrates the rich culinary diversity of Peru, including its native Criollo, Chinese Chifa and Japanese Nikkei cuisines. As head chef, Fung will lead the culinary team, sharing his extensive expertise in Asian cuisine, and skill in restaurant operations.

I have always been so intrigued by the Chifa and Nikkei restaurants in Peru, and with Chef Fung in the kitchen, we will further explore these two unique cuisines.”
Prior to joining ThinkFoodGroup, Fung worked for nearly two decades in restaurants throughout Washington DC in a variety of front- and back-of-house roles--from sushi chef to general manager to chef-owner--and a year cooking at a 300-year-old kaiseki restaurant in Kyoto, Japan. Influenced by his childhood in Hong Kong and international travels, his resume includes crowd pleasers such as Hei Hei Tiger, Tiger Fork & Calico, and Matchbox Food Group. Most recently Fung received positive reviews for Fat Choi Hotpot, an inclusive hotpot experience for at-home dining.
