Celebrate the Arrival of Summer!

Summer is officially here and in the Incan Empire, it’s the time of Inti Raymi, a celebration of and tribute to Inti, the Sun God. Chef Will Fung honors the flavors of the earth in a special menu dedicated to Inti, featuring seasonal produce and ingredients.  

Highlights of the menu include Ensalada de Chilltu, heirloom tomatoes with huacatay, lime dressing and flower blossoms as well as Cara Pulcra, potato with aderezo aji amarillo, crispy pork belly and salsa criolla. The menu will also feature a unique vegetarian ceviche of wood ear and oyster mushroom, camote, potato leche de tigre and sunflower seeds. 

Pair these dishes with beverages from Alan Grublauskus, including the Chicha de Jora with Johnny Walker Black scotch, Matacuy herbal liquor and orange peel or the Chicha Loco -  Caravedo Acholado pisco, Chicha morada and lime air.
